LowLow Cheese and Thyme Stuffed Chicken Main Meal

Prep time: 10min; Cooking time: 35min
Serves 4

Ingredients

1tsp olive oil
2 shallots, finely chopped
2tbsp pine nuts
2tbsp breadcrumbs
1tbsp thyme
80g LowLow mature cheese, grated
4 chicken breasts

Method

1 Preheat the oven to 200C (180C fan oven) gas mark 6. Heat the oil in a pan and fry the shallots for 5min until golden. Add the pine nuts and cook for 2-3min until golden. Take off the heat, stir in the breadcrumbs and thyme and season well.

2 Slice one chicken breast two thirds of the way through the middle and fill with a quarter of the breadcrumb mixture and a quarter of the cheese. Wrap the bacon around and put on a baking sheet. Repeat with the other chicken breasts.

3 Roast in the oven for 30min until the chicken is golden and cooked through.
