Simple yet delicious, double baked for a melt in your mouth flavour that’s a new take on an old favourite.

LowLow Double Baked Potatoes Main Meal

Prep time: 15min; Cooking time: 1hr 15min
Serves 4

Ingredients

4 baking potatoes
A little sunflower or olive oil
1 egg yolk
1tbsp wholegrain mustard
120g LowLow mature cheese, grated

Method

1 Preheat the oven to 200C (180C fan oven) gas mark 6. Rub the potatoes in oil, then salt and cut a cross in the middle. Bake in the oven for 1hr.

2 Mix together the egg yolk, mustard and cheese in a bowl.

3 Take the potatoes out of the oven, cut through the cross on top and gently ease the potatoes apart.

4 Fluff up the inside with a fork and scoop some of it into the bowl with the egg and cheese mixture. Season well and mix together, then spoon back into the potatoes. Return to the oven for 10-15min until melted and golden.
