Liz's Lasagne Main Meal

Prep time: 30min; Cooking time: 1hr 45min to 1hr 55min
Serves 4-6

Ingredients

500g lean mince
1 onion, finely chopped
1 carrot, finely chopped
1 celery stick, finely chopped
400g can chopped tomatoes
300ml hot beef stock
100ml dry white wine
2 bay leaves
250g spinach, washed
30g butter
30g plain flour
300ml semi-skimmed milk
Nutmeg, to season
160g LowLow mature cheese, grated
6 lasagne sheets

Method

1 In a large pan, brown the mince in batches, pressing it down and chopping it up into bits with the back of a wooden spoon as it starts to colour. Set aside, then add the onion, carrot and celery stick. Cook for 15min until softened and started to turn golden.

2 Add the chopped tomatoes, beef stock white wine and bay leaves. Season well. Cover and bring to the boil, then remove the lid and simmer for 1hr until the sauce has reduced and thickened.

3 Cook the spinach in a separate pan until just wilted.

4 Melt the butter in a small pan. Add the flour and cook for 1min. Add the milk slowly, stirring all the time to make a sauce. Cook for 1-2min. Season with salt, pepper and nutmeg.

5 Preheat the oven to 190C (170C fan oven) or gas mark 5. Put half the meat sauce in the bottom of an ovenproof dish measuring around 28cm x 19.5cm. Top with a third of the spinach, the lasagne sheets, half the white sauce and half the cheese. 6 Repeat with the remaining meat sauce, spinach, lasagne sheets, white sauce and cheese. Cook in the oven for 30-40min until hot all the way through.
